Among the Scottish distilleries on the island of Islay, Caol Ila boasts a long tradition of independent bottlings. The selections are many, thus making it possible to taste various nuances of this solid peaty malt, in all its aspects both in terms of age and the cask used. In this case, Wilson & Morgan, an independent italian bottler, has chosen to combine several first-hand ex-bourbon casks, filled in 2011 and blended in 2017. The casks used are number 1, 2, 3, 4, 6, 7 , 8, 9, 10 and 11.

Tasting Notes CAOL ILA 2011/2017 WILSON&MORGAN – BARREL SELECTION

Nose: a fine peat note, citrus and slightly vegetal. Notes of white pepper mixed with lemon and cedar are followed by chemical sensations, not too evident, of paint and rubber.

Palate: the first impression is sweet. Spices arrive after a few moments, especially white pepper. The citrus side is more evident, particularly cedar, followed by yellow melon and apricot. The intensity is not particularly pronounced.

Finish: medium intensity and persistence. Spices meet licorice and peat. Not very broad.

This Caol Ila 2011/2017 Wilson&Morgan – Barrel Selection is rather tame and it doesn’t exceed in complexity and enjoyment. A product that can be considered as a daily drink, because of the low intensity. However, it does not completely satisfy the palate.
